German Pancakes

Another family favorite we eat regularly.  Just wanted to share.  We call it German Pancakes, but it's also been called Puffy Oven Pancakes

Preheat oven to 400 degrees.

In the blender add 1 1/4 cup milk and 7 eggs. Turn on low and let blend while getting 1 cup flour.  Gradually add flour while blender is on.  Keep mixing while doing the rest of the prep.
Melt 1/2 stick butter. Generously spray 9x13 pan with cooking spray. Pour melted butter in and rotate pan to spread butter all over the bottom of the pan.


 When the oven is preheated, add a pinch of salt to the egg mix then pour into prepared pan. Try not to mix the butter and the egg mix.

Bake for 22-23 minutes.  It will come out all huge in the pan. We love this part!

You can top it with fruit and whipped cream, regular maple syrup, or make our favorite - Buttermilk Syrup!

Did you know you can make your own buttermilk in about 1 minute?  This way you can only make what you need and not waste 3/4 of a carton of store bought because you only needed 1/2 a cup.

Get 1/2 cup milk and add 1 1/2 tsp vinegar. Let sit for about 1 minute.

In a sauce pan melt:
1 cube butter
1 cup sugar
1/2 cup buttermilk

Bring to a slow boil and boil for 1 minute.
Keep stirring so it doesn't boil over.
Take off heat and add:
1 tsp vanilla
1/2 tsp baking soda
Stir well.  This will store in the fridge for up to one month.
