Chocolate Peanut Butter Coconut Balls

A quick yummy treat.  Think Reeses and Almond Joy fused together.
Chocolate Peanut Butter Coconut Balls 

In a large microwave bowl combine the following:
18oz jar peanut butter - creamy or regular
5 1/2 cups powdered sugar
1 cup butter
Place in microwave  and melt. About 1 minute at a time, heat and stir.

Spray 9x13 pan with cooking spray.
Spread peanut butter mix in pan.
Melt chocolate bark in microwave or in double boiler.  I used chocolate chips and added a little milk to make it smooth and spreadable.  Spread over peanut butter.
 Place pan in fridge to firm up. About 1 hour.  Remove and form into balls. Roll in coconut and put back in fridge. Let set for 1 hour and serve.
They're great treats to tuck into the lunch box!  Enjoy!
